    Default Quinoa Recipes Anyone?

    Hello, everyone! I was wondering if any of you have any good recipes/ideas for using quinoa? My cousin made a salad with tomatoes and cucumbers and a viniagrette that as excellent and I'm really excited to get more of this into my diet. I love it and I'm trying to eat alot cleaner and healthier than usual for me, so if anyone has any ideas that would be great!! Thank you!

    I make these excellent quinoa patties that my carnivorous dad and brothers just love! I'll post the recipe when I get a chance!

    Also I make quinoa pumpkin muffins that are very good!

    If you have leftover quinoa you can use it like you would oatmeal. Very good with mango, bananas, blueberries, coconut, etc. Oh, and some pecans and brown sugar and raw milk. Yummm...

    Here are the recipes!

    Quinoa Pattie

    4c. quinoa, cooked
    9 eggs
    2 tsp. salt
    2 tsp. cumin
    1 onion, chopped
    8 cloves garilc, minced
    1/2 tsp. cayenne--or more if you can handle it!
    2 c. italian breadcrumbs--I've used panko crumbs before with good results as well
    3/4c. chedder cheese
    3/4c. mozzerella cheese
    1/3c. parmesan cheese

    Mix everything up, and form into patties. I use a 1 1/2 inch biscuit cutter and pack 1/4 cup mixture into it. I make usually 24-26 patties. Then fry in EVOO till crispy and very golden on both sides--usually about 6 minutes on each side.

    Enjoy with some lettuce "wraps" with a couple peices of avocado on top with some chipotle mayo. Mmmmm!

    Here's the recipe for quinoa muffins--

    Pumpkin Quinoa Muffins

    Ingredients:

    • 3/4 cup brown sugar
    • 1 1/4 cup whole wheat flour
    • 1 1/2 tsp. pumpkin pie spice
    • 1 tsp. baking powder
    • 1/2 tsp. salt
    • 1/2 tsp. baking soda
    • 3/4 cup quinoa, cooked and drained
    • 2 eggs (or equivalent fat-free egg substitute)
    • 3/4 cup pureed pumpkin
    • 1/2 cup fat-free milk
    • 1/4 cup butter or margarine, melted
    • 2 tsp. vanilla extract
    • 1/2 cup raisins (I used a mix of regular and golden)
    Directions:

    Preheat oven to 400°F. Line a 12-cup muffin pan with paper liners. In a large bowl, combine the first six ingredients. Add the quinoa, stirring with a fork to separate. Add the eggs (or substitute), pumpkin, milk, margarine, and vanilla. Stir until just incorporated, then gently fold in the raisins. Bake approximately 30 minutes, or until the muffins are golden brown and a toothpick comes out clean.
    Freezing Directions:

    Cool completely, then place muffins into a gallon-size freezer bag. Label and freeze. Thaw at room-temperature to serve, or muffins can be heated individually in the microwave for 1 minute, or until warm.
    Servings: 12

    Nutritional Information:

    1 muffin: 188 calories; 32.6 g carbs; 4.6 g fat; 4.6 g protein; 1.7 g fiber; 5 WW Points Plus

    This all sounds yummy. Having leftover quinoa with my meatloaf tonight. Will have to try some meals centered around it soon.
