    That does sound good. I one time made a flourless chocolate cake...it was delicious and very rich, but it had cream cheese in it. I will have to try this recipe, now, too. Thanks!

    Yesterday I bought a can of Thai Kitchen organic coconut milk so I could make the chocolate mousse/frosting you've been talking about. Had to put the milk in the fridge overnight. (So much for instant gratification). I was tempted to make it first thing this morning but thought if it was really good I might eat too much for "breakfast". I made it for lunch, supposedly for dessert, but it was ready before my other food so I had some before and some after... and some for a snack... and some for supper... Yep, it was good. I don't think I'd like it without sweetener, though. I did try to keep it to a minimum. Thanks for sharing.

    Here's another chocolate mousse recipe. It was one of Mark Bittmans's from NYT minimalist cooking series online. My family loves it. I did not tell DH what was in it to begin with because he's not a "tofu" kind of guy

    - Two small packages of soft tofu (I think it's about 16 oz, but I don't have any in the refridgerator to look at)
    - 6-8 oz "Good" dark chocolate bits. This is the not healthy part, but using good chocolate really makes a difference. I use Ghirardelli 60% bitter sweet.
    - 1/2 teaspoon vanilla
    - a bit of some sweetener to taste, stevia works well.

    Melt the chocolate over a double boiler. Let cool slightly then put everything into the blender. Blend until well combined. Chill.
    The texture is amazing and the taste is great. I'm sure that you could experiment with different chocolates to make it even healthier. If you really want to go all out, a dollop of homemade whipped cream on top is very tasty.
