    And if you don't like the "tiny fairy eyeball" feeling of chia - you can always grind them in a coffee grinder... You still get the benefits without the "tapioca" effect.

    I've never used the nibs myself. I looked at the price and thought I could live without them, LOL! But I hear they are very tasty and a great chocolate chip substitute.

    I use coconut sugar, but sparingly. I try not to use too much of any sweetener. I like it, it's comparable to brown sugar.

    I've heard that when a tree gets tapped for the syrup, it can't produce coconuts anymore....Tropical Traditions has an article about it....

    Brooke, I just made your chocolate dessert and I'm letting it chill overnight, will let you know if I like it..I did taste if off the spoon and its so good off the spoon ---if its better after the big chill then I'm sold !
    I am sold on this dessert and its easy to make- and calories are only about 40 --the way I made it...

    I've made this three times and it only turned out the first time (and it was so good). The other times it never fluffed up. I can't figure out what I'm doing wrong. I used full fat coconut milk every time. The only differences were that batch #2 & #3 used a different brand of coconut milk and I halved the cocoa after the first batch. #4 is in the fridge with the original brand and original amount of cocoa, but if this doesn't work, I think I'll have to give up. Any ideas?
