    Hi, Lori!

    I use full-fat, organic canned coconut milk (it is a VERY occasional splurge!). I'm a bit leery of anything low-fat when the company adds things to make it "feel" full-fat. About 2/3 of the can is thick, but the bottom, watery third takes some mixing to get the consistency even. I like a CHOCOLATE taste. Some of my friends prefer a bit less cocoa. If you try it, I'd like to hear how you like it!

    Nanci, thank you! I missed the cacao powder and vanilla extract. They speak too fast and turn there backs to the camera I missed half of the things I think I'll just do it tonight! Yum, can't wait to get home form work

    Wow! Thanks everyone , I really want to try them all but maybe the chia pudding first. I've tried chia pudding once befor but now I'm gonna give it a secound try ..I have some peanut butter cookies that are so good and gluten free, but I have it packed away..I'll post a different version, I got my recipe from flylady boards.

    Best Peanut butter cookies..
    2 cups peanut butter
    2 cups white sugar ( use what ever makes you happy to equal 2 cups of sugar )
    2 eggs
    2 teaspoons baking soda
    1 pinch of salt
    1 teaspoon vanilla
    preheat oven to 350-spray cookie sheets.
    in small bowl stir peanut butter and sweetener of choice til smooth..beat in the eggs one at a time, then stir in salt and baking soda and vanilla.
    roll dough into 1 inch balls and place 2" apart on sheet and criss cross with bottom of a fork and bake 8-10 minuts in preheated oven--let sit 5 min befor removing from sheet...cal 132-fat 7.5 chol 12 mg...


    Bluberry oat bran muffins
    2 cups oat bran
    1/8 teaspoon stevia
    2 teaspoons bake po
    1/4 t bake soda
    1/2 cup low fat vanilla yogurt
    1/2 cup orange juice
    1/2 cup egg sub
    2 tablespoons evoo
    3/4 cup frozen unthawed blueberries
    1. combine the oatbran, sugar, bk po. , and bk soda in large bowl, an stir and mix well
    combine the yogurt , oj, egg and oil in a small bowl and stir to mix well..
    2.add yogurt mixture to oatbran and stir to mix well and fold in the blueberries ( still frozen )..Coat bottom only of muffin cups and fill 3/4 full with batter. bake 350 for about 16 min or til toothpick inserted in center comes out clean..let sit five min befor removeing.makes 12 muffins
    60.2 cal-fat 2.9- chol 0.8 -sod 138.6 -carbs 8.4- fiber 1.3 protein 2.8 per muffin...

    Abbie- I had never heard of Chia Pudding until I saw your post.

    I already love chia seeds and I love pudding. I searched for some recipes and made some. Loved it. Thanks!

    Glad you liked it Nanci!! I find that the whole chia seeds work much better then the "peppered" chia seeds. I am not sure which kind you have?? Whole chia seeds make the pudding more like tapioca pudding--which I love.

    Anyways, glad you liked it!
