I don't know if I've ever posted this, but I just recently "remembered" it and it's been a hit with my kids, lately. It takes about 2 minutes to make a personal cheesecake with pretty good ingredients for a quick, relatively healthy dessert.
Just spread some cream cheese (I use organic) on a graham cracker (I like New Morning from the HFS) and top with a little all-fruit preserve of your choice. Sometimes, I'll add some nuts, like pecans.
(It's easy to limit yourself to one, even though you might like to have more.....Just set your intention before you eat the first one! LOL)
