Healthy mayonnaise?
I know, I know! My husband is mayo phobic. I do like mayo with my tuna, can't help myself. I've seen cannola and safflower oil mayo in health food stores. Are they better than the soybean oil that is used in most commercial mayonnaise? Isn't that a form of hydrogenated fat?

I've made homemade with just olive oil and than half and half olive oil/coconut oil. Comes out great!!! I also use honey instead of sugar and it still turns out good (I just add a bit of thickener like gaur gum). Good luck!!!

Hi Justkim - No, mayo isn't a form of hydrogenated fat, but read the label, because it could be made with it! It is emulsified fat that happens when the lecithin in the egg yolk hits the oil; it suspends the fat globules in a milky solution.
But you're smart to avoid the soybean mayo! And sometimes the HFS versions aren't much better; they'll say "safflower" or whatever but then they're cut with soybean after all!
I agree with Air Angel - that is a good blend because you have the monosaturated olive oil for good flavor and the lauric-acid-filled coconut oil for stability. (If you're making your own at home with coconut oil, I recommend the expeller-pressed, unless you want a coconut taste to your mayo!) Another reason for choosing these oils is they're not your standard Omega-6, which is so prevalent in American society as to make our oil profiles lopsided. Omega-6 fats can be inflammatory, so choosing the less-reactive monosaturates and saturates is a good idea.
But if you really want to have your mayo more viscous, then you'd probably like to add in some Omega-6, and I recommend grapeseed oil. It's incredibly light in flavor but it's all there. (Because if you DO go the coconut/olive route, that's probably going to be some pasty mayo straight outta the fridge! I know, I did it once.)

we use veganaise but I honestly have NO idea what is in it. We use the type with grapeseed oil in it. No one can tell the difference.

Kitty, it's probably an eggless tofu-based spread product. (And if it does have tofu, then it is also soybean oil-based.)

Thanks for the info. Was thinking of the olive oil mayo, but couldn't find it in the store. I'll just have to make some. Of course, DH will think I've really flipped this time. Mayo is his kryptonite. The mere smell of it makes him ill, he can barely bring himself to touch a jar in the refrigerator as he's reaching for something else.

Helena - you are right - there IS soy in there. Here is a link to some information about it. My DH LOVES Mayo and couldn't tell the difference.

Wow Kitty, I'm not into soy but the other ingredients are terrific. If they made a soy-free version, I'd buy it!
Justkim, perhaps your husband is lacking in lipase, the enzyme that helps to break down fats? It's interesting how our bodies warn us away from things we have trouble dealing with!

Helena, that's a possibility. DH seems to remember a food poisoning episode; an unfortunate encounter with a spoiled sandwich. He becomes nauseous just smelling mayo. Either way, he won't touch it.
