I am still learning what is GM and MM and I haven't looked up cheddar cheese, but everyone went for this dish tonight. The red tomatoes and green peppers could give it a Holiday Flair. Anyway, thought I would put it out there since people are always wanting recipe suggestions!
This is from Southern Living - Our Best Low-Fat Low-Calorie Recipes. I have reduced the red pepper because I am sure 1/2 tspn for this amount of lentils was a misprint! Otherwise it is just as it is in the book.
Lentils and Rice Casserole
1 C. dried lentils
Vegetable cooking spray
1 tspn reduced calorie margarine
1 cup chopped onion
1 cup green pepper
2 cloves garlic, minced
1 (14 1/2 oz) can whole tomatoes, undrained and chopped
1 tspn paprika
1/2 tspn black pepper
1/4 tsp ground red pepper
1 tsp salt
2 cups cooked brown rice (cooked without salt or fat)
1 1/2 cups (6 ozs) shredded reduced-fat sharp Cheddar cheese
Cook lentils according to package directions, omitting salt. Drain lentils, and set aside.
Coat a large nonstick skillet with cooking spray; add margarine. Place over medium heat until margarine melts. Add onion, green pepper, and galic, cook, stirring constantly, until tender. Stir in lentils, tomato, and next 4 ingredients; bring to a boil. Cover,reduce heat, and simmer 20 minutes, stirring occasionally.
Spoon rice into a 2-quart baking dish coated with cooking spray; spoon lentil mixture over rice. Bake, uncovered, at 325 degrees for 15 minutes. sprinkle cheese over lentil mixture, and bake 5 additional minutes or until cheese melts. Yield: 4 servings. (more like 14 side servings!!)
I did substitute real Cheddar for the reduced fat, but put less than 1 cup on the top. I also used green onion instead of bell pepper (I need to shop!) and I just loved the red and green...guess I'm in the Christmas mood despite the 70 degrees outside!
