    Default Vegan side dishes

    Spicy Sweet-Potato Fries

    by Chef Alexandra Jamieson

    2 large potatoes, washed, scrubbed, dried, and cut into 1/2-inch “fries”
    1 medium sweet potato, washed, scrubbed, dried, and cut into 1/2-inch “fries”
    2 Tbsp. extra-virgin olive oil
    2 tsp. chili powder
    2 tsp. salt
    2 tsp. pepper
    1 tsp. dry oregano
    1 tsp. dry mustard
    1 tsp. paprika
    • Preheat the oven to 425°F.
    • Combine all the ingredients on a large baking sheet and toss well to coat all fries evenly.
    • Bake for 25 to 30 minutes, tossing every 15 minutes or so.

    Makes 5 cups

    I was getting so tired of the usual that I was making and along you come with these websites!!! I was also wondering what to put in the lunches. This is awesome!! I cannot thank you enough!! I was struggling with what to cook and needed something diffent than what was already in my repetoire.

    Sunshine, you are more than welcome! While I'm not 100% vegan I'm always scouting the vegan cooking sites. You might also want to check out Dr. Fuhrman's site (as well as the book) called Eat to Live, which is mostly vegan. That's kind of my philosophy but I also add a bit more raw foods.
