Sounds like a chocolate fix is needed! I Googled- stevia recipe chocolate
Came up with lots of interesting things. You can keep adding to the search feature and really narrow it down to what you have in your cupboard. Give it a go and see what you're in the mood for!

There is a wonderful "uncook" book called Raw Chocolate that has delectable chocolate treats that are sweetened with all-natural sources. If you haven't tried agave syrup yet, it's very low carb and low glycemic for sweetening. To find the book, go to www.rawfood.com All the recipes I've tried are splendid!! I just lent it out last night;otherwise I'd send you a couple of my favorites.
The one that sticks in my head is a mixture of raw cocoa powder, almond butter and agave syrup rolled into little truffle-sized balls. Yummy!!! You could experiment with the amounts till it tasted right - I just don't remember what they were!

How low carb are you? I make DH a low carb chocolate mousse kinda thing by just whipping up some heavy cream and adding cocoa powder and just a bit of stevia.

Or chocolate cheesecake. 3 pkg cream cheese, 2 eggs, maybe 1 or 2 pkts stevia (you'll have to see how sweet you like it. maybe mix the stevia in before the eggs so you can taste test) and a little vanilla. I bake it at 300 or 325 till it's almost set in the middle. It's DH's favorite dessert!
Do you use coconut oil? I make chocolate covered nuts by mixing the coconut oil with a bit of stevia and vanilla, and adding lots of nuts. Then drop blobs of it on wax paper and freeze till firm. This is so good! (store them in the freezer) You can add some flax seed, raisins, even some nut butter to make it a little smoother... whatever!
Now I want chocolate too!

Hey Holly!
You know, it's been too long - I can't remember the name of the bar, but at the health food store I've actually found a chocolate bar that used sugar made from beets to sweeten it. In fact, DH ate most of the bar before I told him is was "my health food stuff". Pretty yummy!
