Thanks! I stopped eating Paleo, I think I was going low carb too fast- I don't crave them, so it's easy for me to drop them. I have added them back in and am doing better by now. Not great...
I'm having trouble with Paleo...it triggered major depression for me. I've tried adding carbs back in, but it doesn't seem to help. Not sure what I should do, but I can't go on like this. I feel like...
Oh and Carb flu sucked pretty bad. :P It can take three weeks to get through and to me it felt like PMS, Job stress and cooking with nagging toddlers all combined, plus headaches and dizziness. Yep....
But it is good to have some paleo/primal snacks ready so you don't cave! Boiled eggs, organic jerky, macadamia nuts and almonds, berries..just in case. I'm a snacker. :)

the point is to regulate blood sugar, so you don't get tired or cravings. You never go hungry, the fat keeps you full, and you eat as much as you want. It's like autocruise, smooth going....

I found that if I wait until whey and curds are WELL separated, then stir, it will be nice and creamy.
I read that if you press them enough they will 'flaten out' and eventually grow 3D again, and that flat grains produce more Kefiran, which, if I understand this right, is what makes Kefir creamy....

Aha! I am using whole milk from the supermarket, so I will try adding a bit of cream to up the fat.
But I know that some people use supermarket whole milk and still get a lot creamier kefir. But...
I think so too...maybe I'll try some other milk? I heard that adding half and half might help. Maybe I'll try that.
