View Full Version : Raw "butter pecan" Ice Cream (Greensmoothiegirl)

This afternoon, I bought all of the ingredients to make some raw "butter pecan" ice cream as outlined in the video on the greensmoothiegirl.com website. She shows you how to make it on her video page (second video down on the first page - called "raw ice cream") and can be found here: http://www.greensmoothiegirl.com/videos/videos-page-1/. It takes 2-3 days to make because you have to soak the almonds over night and then freeze part of the mixture the second night. I can't wait to try it though....it sounds delicious!
In thinking about it, it might be considered a GM food. There is nothing in it that isn't natural except for maybe the vanilla extract. There is NO dairy in it at all. I'll let you know how it turns out in a couple of days....can't wait to give it a try!
Has anyone ever made this recipe? I love the greensmoothiegirl website and this will be the first recipe of hers that I have ever tried.

Well, it is in the 12-step book that I received when I bought my blendtec blender from greensmoothiegirl. I thought the amounts used to be on her website though. Anyway, the amounts are listed below, but watch the video for how to do it....like I said, it's pretty simple, but it takes about 3 days to make. One day to soak the almonds, the second day to freeze the mixture, and the third day everything is ready to blend up!
2 cups water
1/2 cup soaked almonds
1 - 1/4 cup fresh young Thai coconut
1/3 cup chopped dates
1 1/2 tsp. vanilla
1/3 cup natural peanut butter
5 Tbsp. maple syrup (grade b)
1/8 tsp. sea salt
1/2 cup chopped pecans
The book is GREAT in my opinion....I have referred back to it often.....it also gives good recipes for healthy snacks and other delcious recipes in the blender. Hope this helps!

There is also a great book of recipes for similar style recipes in a book called Vice Cream.
I have made several from that book and they are terrific! Many of the recipes use raw cashews and water as the "milk" base. My DH and I also think that they taste even better after a day or two in the freezer.

OK you blentec and vitamixers....the butter pecan "ice cream" turned out GREAT! I thought it was outstanding! I didn't eat it all at once, so was able to freeze some. My husband didn't care for it, but it has coconut in it which gives him a strange aftertaste for some reason. That means more for me!!! haha I will be making this many more times to come!

Sandy, is that book something I could pick up at the library, or did you have to go to a certain website to order it? I love using nuts as a base....gives it a rich taste and it is good for you to boot!

Here's a recipe I found after reading this thread. I searched online. It is great! I'm going to go mix up the butter pecan after I'm done here! =)
VANILLA ICE CREAM BASE:
1 Cup cashews (no need to soak)
1 1/2 Cup water
1/3 Cup raw agave
1/4 tsp salt (+/-)
1/3 Cup raisins (This is the secret ingredient that imparts the rich/buttery flavor)
1 vanilla bean
1-2 Tbsp Cacao butter or Coconut oil or young coconut meat

i don't have an ice cream maker, so i pour it into ice cube trays and freeze it (only takes about 2 hrs), and then run it in a food processor. i like this method because i can whip the cubes as i need them, instead of just having a huge tub of ice cream in front of me.
**I also added a few tablespoons of coconut milk powder to the mix and it was great. :D These recipes are really going to help me on trying a dairy free diet...I just started it this week.

Rose, how cool! Thank you for sharing the link....the recipe you provided sounds like it is very versatile. I will have to give that one a try soon. I am freezing my cubes too, just so I only make a single serving at a time.

Glad you like Andrea!! I just bought more cashews today...its such a great treat. :p The poster stated she does the cubes. I did cubes too but then I also froze some in 1-2" layer in a silicon bread pan and that worked well too with getting more frozen at a time. It froze soft, broke and bagged easily. I just whipped up the pecan ice cream but am now wishing I'd strained the almond milk. Hope it turns out well. My kids refuse to drink unstrained almond milk...and, I prefer my almond milk strained as well. (sigh)

Well, my kids LOVED the 'pecan' icecream! :D However, we are calling it peanut butter ice cream as that is what it tastes the most like to us....and, um...there are no pecans...unless I'm missing something. Am I right in the interpretation that pecans go on top and not mixed into the ice cream? I'm very excited about these ice cream alternatives and how yummy and relatively good for us they are! :)

And, with time - you could make your own extract!! I did this year - it's good!

Ooooh Grayce (or is it Laura?)!!! My husband and I love making things from scratch! It's cheaper and so much better for you and doesn't contain things like high fructose corn syrup or hydrogenated oils. We currently make a LOT of products from scratch....BBQ sauce, biscuits that we freeze in dough form, onion soup mix, salad dressings, etc. I never thought about making vanilla extract though! I imagine you would need some vanilla beans and some alcohol? Do you have a link to a recipe?

We make pretty much EVERYTHING from scratch - bread, bbq sauce, I am thinking I want to make some artisan dough for bagettes for sandwhiches, but, after the holidays and my dh's Blood sugar numbers come down. Onion soup mix?? oh - would you care to share??
yea - the vanilla - I bought a pint of 110 proof vodka - don't taste it first. I cut the beans into 1 inch pieces, and tossed them in. I did that in August - and yup - vanilla works fine now!!
