We tried this last weekend, and it's really yummy! Different than you've had corn before, but dee-lish!

Paula Deen's Corn on the Cob
1/2 cup Mayonnaise
5 ears of corn
1 cup shredded Parmesan cheese
chili powder
salt
pepper

Brush a thin layer of Mayo on each ear of corn. Sprinkle each ear evenly with cheese, chili powder, salt & pepper. Wrap each ear in foil and grill (turning occasionally) over med~high heat for 10 minutes or until kernels begin to brown.

I found the foil to stick a little, so it might be wise to spray it with non-stick spray before you wrap the corn.

Butter, mayo what's the difference????? It's a veggie, right?[:p] Sounds delish and Paula Deen doesn't lie, LOL!

Love, Love Love Paula...just watching her makes me gain 10 pounds!!! She would fry bacon in butter!!! :D

Meredith,

That's brilliant that Paula has exposed so many people to the way Mexicans have been eating corn for years! In the summer time here in Chicago the 'Elotes' (corn on the cob) Vendors have their little push carts with exactly those ingredients available and NO BUTTER!

In general though, the corn is not sweet corn like we are used to, it's a much more savory corn which I think goes better with the savory flavors of mayo, chili and parm.

I was thinking of using Heather's (trainer in IA) trick of using healthy Mayo made w/canola or Flax oil!
