Is it just me, or does one really need to choose between GF and healthy? Not saying that GF isn't healthy, but I've been scouring the web for GF recipes, and a lot of them have ingredients that I won't use now! Like crisco, margarine, white sugar, brown sugar, etc. Does anyone know of any good GF recipes that use healthy ingredients (like butter, honey or other sweetener other than sugar, etc)?

Palm Shortening is a wonderful ingredient for use in baking. I use it to grease my pans and anywhere shortening is called for. Read about it here...http://www.tropicaltraditions.com/organic_palm_shortening.htm
Coconut flour is a great cooking ingredient. I have found the coconut flour book by Bruce Fife to use honey, etc. for sweetening. He only uses butter and/or vco in his recipes. The muffins and quick breads are quite nice and a few of the cookie recipes have become favorites.

I agree with Rose on checking out the Tropical Traditions resources.
If you don't mind being open to using recipes from other styles of eating, you could just 'borrow' from non GF specific sources, using ingredients you know to be gluten free.
Depending on the type of food you are making, you can get a lot of ideas from low carb cookbooks, since, by their nature they often completely omit grains and sugars. Of course the dessert type recipes often use fake sweeteners and some of the low carb products and baking flours contain gluten, so you would have to be careful of those.I have heard Dana Carpender has some good healthy (lower carb) recipe books out.
Maybe a raw food book/site could be helpful if you are looking for treat type foods. None of those recipes I have seen even remotely resemble cake or cookies, but a lot of them use things like dried fruits, nuts, coconut, carob and honey to make confections that are kind of like Larabars.
