Bought some once, but had to count it on WW Core plan, so switched to granulated fructose. Think I'll get some again. I really liked the taste better than honey:)

I've been using the raw agave nectar as part of my mostly raw foods diet and really like it! It's so much easier to use than honey (less thick and sticky) and tastes so mild that it doesn't affect the flavor of the dish you're using it in. The low glycemic index is just a big PLUS! (And it's sweeter than sugar, so you don't have to use as much.)

Can anyone tell me how to modify recipes for baking with agave?

We love agave in our house. It's prefered over raw honey.
Here is more info on agave - http://www.dld123.com/sweetsavvy/sweeteners/summary.php?id=Agave%20Nectar
My brand only gave a +4 sugar rise - WOW! It's Wholesome Sweetners Dark. Nice to know I bought the good stuff. The flavor is really nice.
Meredith - Per the link use three-fourths agave for the recommended amount of sugar and reduce the amount of liquid. I haven't tried this now...;)

Hmmm, interesting. She didn't test Wholesome's raw light, which is the only raw one at my HFS. I didn't even know they HAD a dark one. I'll have to ask next time I go in there. I've seen dark varieties in other brands, but they weren't raw.
I'll have to check out those recipes when I have more time!
