Since Type O's like me should cut down on wheat, etc., I thought I'd try making some spelt bread and found some spelt flour in the bulk bins at Fred Meyers.
Has anyone baked with this? Does it need any gluten or additive like that to raise? Any good recipes? My favorite homemade bread is Moroccan Anise, which takes me two days to pig out on, so if I'm going to pig out on bread once in a while, I'd like to try a healthier alternative.
I also got some rice flour and have the same questions. I've made a white bread from left over rice which is also great.
