Here's a start.
The lymphatic system does not have a main pump like the heart is to the circulatory system. You pump the lymphatic system with muscles. The reason you T-tapp in a specific order is to facilitate the pumping of the lymph and draining it.
Here's a good one:

Here's a good reference site for the lymphatic system.

The short version is it helps maintain fluid balance,
helps fight disease and takes lipids (fat) from the intestine
to the blood. The system is a sort of filter.
I'll defer to Thersa for TTapp specifics, but keeping the
lymph in good working order is essential for good health.
Unlike the cardiac system that uses the heart to pump blood,
moving your muscles activates the lymph to flow.
Hope this helps........

This may not be scientifically the best answer but here is how I see it. Think of how blood travels through your body and you can picture the arteries, veins and such spread throughout your body as like the highways for blood to travel around. Well the lymph system is like this, sort of almost side by side all the arteries and veins except blood doesn't travel through it but this liquid, I guess called lymph, which is like the sort of sewage system for your body. All the toxins and icky things travel through it but if it gets too icky it can get stagnant and clogged and that's just not good at all. That can lead to cellulite and a host of other issues.
T-Tapp works by pumping that stuff through and out into the proper areas where it can be eliminated. In the same way your heart pumps the blood around, exercise is neeeded to pump the lymph around. T-Tapp is the best form of exercise to do this because Teresa has designed it specifially with this function in mind. If you've ever done PBS or some Tapping after taking a break and gotten that sort of nauseated feeling, that is from T-Tapp pumping all that lymph into your system and then your body goes eewww this stuff is gross now I remember why I was trying to tuck it away in the fat cells in your thigh. T-Tapp helps to get that stuff out of your body. Yay!
I found this old newsletter that offers a better explanation from Teresa herself:

Just keep Tapping...just keep Tapping...
